Ingredients:

  • Eggplant, cut into small cubes (3-4 pieces)
  • Chopped onion (1 piece)
  • Minced meat (300 grams)
  • Tomatoes, cut into small cubes (2 pieces)
  • Green hot pepper, chopped (1 piece)
  • Chopped parsley (a small cup)
  • Garlic minced (3 cloves)
  • Tomato paste (one tablespoon)
  • Salt and black pepper to taste
  • Olive oil (one tablespoon)
  • Water (a cup)

Steps:

  1. Fry the eggplant cubes in a deep frying pan until golden, then transfer them to a plate and set them aside.
  2. In the same pan, add salt, black pepper and oil, and stir well.
  3. Add the chopped onion and minced garlic and sauté until golden.
  4. Add the minced meat and stir until done.
  5. Add the chopped tomatoes to the pan and continue to sauté until soft.
  6. Add the tomato paste and stir well.
  7. Add the fried eggplant cubes, chopped hot pepper and chopped parsley, then keep stirring until the ingredients are well mixed.
  8. Add the cup of water and bring to a boil over medium heat for 10-15 minutes, or until the sauce becomes thick and sticky.
  9. Serve the hot eggplant fatteh with toasted bread or rice.
